Bistecca alla fiorentina is always served rare (al sangue) — do not ask for it well-done, as the restaurant will likely refuse. The steak should be at least 4 centimetres thick and from Chianina or Maremmana cattle. Order it by weight (typically 1-1.2 kg for two people). The best bistecca in the city centre is at Buca Mario or Trattoria Sostanza, where they also serve the legendary butter chicken.
